Hi, I’m Chang from South Korea. My research background is in metabolic engineering of bacteria for producing valuable chemicals from renewable feedstocks. Now, I’m expanding my research into microbial food applications by engineering yeast biomass and bacterial cellulose to develop next-generation meat alternatives with improved texture and nutrition. I’m especially interested in co-culture systems and the use of genetic engineering to tune material properties.
Outside the lab, I enjoy watching movies, traveling, and hiking.
